In 1997, Cowgirl Creamery was started as a dream of two college friends and business partners, Sue Conley and Peggy Smith. They wanted to cultivate organic practices and spotlight the craftsmanship of the local sustainable agriculture in Sonoma County. Today, Sue and Peggy still own and operate Cowgirl Creamery. Carrying the torch of the food revolution that they began almost 30 years ago. This month we are featuring one of their most famous creations, the beloved triple cream Mt Tam. This American Original has all the lusciousness you expect from a triple cream. It is produced with organic, locally sourced milk and rises above the standard for bloomy rind cheeses. Enjoy fudgy firmness when young to buttery softness when aged. Always with clear notes of creme fraiche and grassy/lemon with complex mushroomy undertones.
