This month's Cheese Spotlight is one of Italy's most ancient and boldly satisfying traditions — Pecorino Pepato. Born in Sicily and rooted in the rich sheep farming culture of Southern Italy, Pecorino Pepato is exactly what its name promises: a lusty, salty sheep's milk cheese studded throughout with whole black peppercorns. Those peppercorns are added during the curdling process, ensuring they're evenly distributed throughout the paste — so every bite delivers both the rich, nutty sweetness of the sheep's milk and a warm, slow burst of spice. The result is a creamy yet slightly crumbly texture with an earthy, inviting aroma and hints of grass and nuts. It's the kind of cheese that commands attention on a board, holds its own grated over pasta, and pairs beautifully with a bold red. Simple, ancient, and completely irresistible.
